It's a very interesting and multi-step process. We don't have one chef or a specific person who suddenly comes up with a new dish and puts it on the menu. That's an important difference from conventional restaurants. The recipes are developed with the European and global teams. Before a product hits the counter, it goes through a myriad of steps: analysis, approval, vendor interviews, safety, testing. Every aspect needs to be worked out, to consider all the risks and to think about the opportunities it can provide.
